Lavender and Almonds

Several years ago now, my friend, Cindy and I took a drive on a summer’s day to visit Seafoam Lavender Gardens. 

It was a lovely drive, and the Gardens are situated in one of those spots where you just want to set down some roots for the summer. I don’t know if you can tell in the above picture or not, but just on the other side of the road from the lavender farm is the Northumberland Strait. That’s the body of water that separates Nova Scotia from Prince Edward Island.

The day was warm. A gentle sea breeze was blowing. The sun was shining. All in all, it was a perfect summer day. 

At Seafoam Gardens, we took a stroll between the lavender plants and then visited the store where I purchased a couple of lavender items. One of those was a jar of honey. (And yes, it does have a faint flavour of lavender to it which is lovely.) 

Just the other week, I went looking for a muffin recipe so that I could make a few muffins to give to a friend. I knew that my friend’s husband can’t have wheat or dairy, so I wanted something that would be safe for him. That way they could enjoy a little treat together. 

The recipe I found was Perfect Almond Flour Muffins, which you can find at this link.  

To sweeten them, the recipe suggested either maple syrup or honey. I happened to have a jar of Seafoam Lavender honey in my cupboard, so, of course, I used that.

The result was similar to what you see in the picture above. The muffins pictured are from the third batch as the first two batches didn’t last very long! I’d call that recipe a keeper!

Maybe… just maybe, these muffins will have to go on the menu of Cari and Emma’s cafe, The Baked Apple, in my Hatfield Falls series. 🙂 #yum
